Ingredients:

2 racks of pork baby back ribs (or St. Louis style)

½ cup brown sugar

3 tbsp paprika

2 tbsp garlic powder

2 tbsp onion powder

1 tbsp black pepper

1 tbsp kosher salt

1 tsp cayenne (optional)

1 cup apple cider vinegar (for spritzing)

1½ cups BBQ sauce (store-bought or homemade)
Method:

Prep ribs: Remove membrane from ribs’ underside. Pat dry.

Make the rub: Mix sugar + spices. Massage onto ribs (cover all sides).

Smoke: Set grill to 225°F (107°C) with indirect heat + wood chips (hickory/apple). Place ribs meat-side up. Smoke for 3 hours, spritzing with vinegar every 45 mins.

Wrap: After 3 hrs, wrap ribs in foil with ½ cup BBQ sauce. Cook for 2 more hours until tender.

Glaze: Unwrap, brush with sauce, and grill 10 minutes to caramelize. Rest for 10 mins, then slice.
