Smoky BBQ Ribs (Low & Slow)

A deliciously seasoned and cooked pork chop resting on a baking tray, ready to serve.

Prep: 15 mins | Cook: 5-6 hrs | Serves: 4

Ingredients:

  • 2 racks of pork baby back ribs (or St. Louis style)

  • ½ cup brown sugar

  • 3 tbsp paprika

  • 2 tbsp garlic powder

  • 2 tbsp onion powder

  • 1 tbsp black pepper

  • 1 tbsp kosher salt

  • 1 tsp cayenne (optional)

  • 1 cup apple cider vinegar (for spritzing)

  • 1½ cups BBQ sauce (store-bought or homemade)

Method:

  1. Prep ribs: Remove membrane from ribs’ underside. Pat dry.

  2. Make the rub: Mix sugar + spices. Massage onto ribs (cover all sides).

  3. Smoke: Set grill to 225°F (107°C) with indirect heat + wood chips (hickory/apple). Place ribs meat-side up. Smoke for 3 hours, spritzing with vinegar every 45 mins.

  4. Wrap: After 3 hrs, wrap ribs in foil with ½ cup BBQ sauce. Cook for 2 more hours until tender.

  5. Glaze: Unwrap, brush with sauce, and grill 10 minutes to caramelize. Rest for 10 mins, then slice.

 Serve With:

  • BBQ: Cornbread, coleslaw, baked beans

  • Steak: Garlic mashed potatoes, grilled asparagus

  • Drinks: Ice-cold beer, bourbon, or red wine
